Vodka pasta

Ingredients
2 T. butter2/3 cup vodka1 tsp crushed red pepper2 cup chopped tomatoes (canned work also)1 tsp salt1 cup fat free half and half2 oz. lowfat cream cheese1/2 cup parmesan cheese, grated1/2 lb penne pasta, cookedCan also add chopped onions, green pepper, zuchini, minced garlic, etc.
Directions
Melt butter. Add vodka and crushed red pepper. Stir for 2 minutes. Add tomatoes and other veggies, if wanted and salt. Heat until thick (about 45 minutes). Cook pasta according to package. Stir in cheese (parmesan and cream cheese) and half and half. Serve over pasta.

4 servings- 1 cup cooked pasta, approx. 1/2 cup sauce
