Mashed carrots & potato

Ingredients
2 medium potato2 servings carrots1/2 large onion1 oz fat free cream cheese1 Tbsp county crock shed's spread lite1 tsp olive oil1/4 cup skim milk
Directions
Boil enough water to cover potato and carrots. Add carrots to boiling water and cook for 10 minutes. Add potato and cook until both reach desired tenderness, about 25 minutes.

While boiling the potato and carrot mix, saute 1/2 onion in the olive oil until caramelized.

When carrot and potato mix is tender, drain and mash. Add the onions, cream cheese, spread and milk. Mix until well blended.

Heat briefly on stove top or microwave
