Bacon Spinach Frittata

Ingredients
2 Egg whites2 medium eggs1 strip of thick cut bacon cooked and chopped.1 c spinach1 tomato2 Tsp Parmesan cheese,grated1/2 t garlic powder
Directions
Serves 1
Preheat oven to 350

I start by laying the defrosted spinach in the bottom of my baking pan.
I then remove the fat from the bacon. I cook the bacon in the frying pan. Then place on paper towel to remove excess grease. Break or cut into small pieces.
I crack 2 eggs removing the yolks, and put the egg whites only in a small bowl and add 2 whole medium eggs. Beat them lightly with a fork. I stir the bacon into the eggs. I pour eggs and bacon over the spinach.

I top it with sliced tomatoes and the parmesan.

Bake in preheated oven for 15 minutes, then place under the broiler of 3-5 mins.
