Oat Waffles (Plain or Pumpkin)

Ingredients
3/4 cups white flour 3/4 cups whole wheat flour1 cup oatmeal 1 tablespoon baking powder 1/2 teaspoon cinnamon 1/4 teaspoon salt 1/2 cup Egg Beaters egg substitute 1 1/2 cups skim milk 1/2 cup applesauce
Directions
1. Mix all dry ingredients together in a bowl.
2. In another bowl, mix all wet ingredients.
3. Make a well in the dry ingredients and pour in the wet, and mix together.
4. Preheat waffle iron and coat with cooking spray.
5. Cook waffles in waffle iron.

To make Pumpkin Spiced Waffles use 1/2 canned pumpkin instead of applesauce & add
2 tsp. ground ginger
1 tsp. ground cloves
1 tsp. ground nutmeg

    My 3 yr old loves these! They are very yummy. We've been making double batches Sunday AM so there are leftovers to freeze. We are making the pumpkin version now, though I didn't add the pumpkin pie spice as DH doesn't like it. We'll do applesauce soon. - 11/21/11
