spanish omlette

Ingredients
3 medium potatoes, peeled and diced2 small or 2 large onion(1.5 cups) small dice4 eggs1 cup egg substitute
Directions
Boil potatoe in salted water until tender- drain,

Preheat oven to 400

meanwhile saute onion in a LARGE pan in 1 Tbls olive oil over med heat. When onion is beginnng to brown add potatoes.

Mix egg and egg substitute together and pour over onion potato mixture. Allow to cook on botton WITHOUT STIRRING.
**if handles on pan are not oven proof- cover with tinfoil to prevent danage from oen.

When bottom is firm- remove from top of stove to oven and turn heat to broil. Allow to cook top in oven.

Turn out onto lareg plate and slice- serve with ketchup ***optional
...makes 6 small servings or 4 generous ones. (calories are for smaller portions)
