Brown Rice Salad with Grilled Chicken

Ingredients
3 c cooked brown rice3 c cubed grilled chicken breast (approx 1 lb)2 medium green apples, diced1 medium red bell pepper, diced2 large celery stalks, finely chopped2/3 c chopped green onions1/2 c chopped pecans3 T minced fresh parsley1/4 c cider vinegar3 T olive oil1 T lemon juice1 t salt1/4 t pepper
Directions
In large bowl, combine rice, chicken, apples, bell pepper, celery, onions, pecans, and parsley. In separate smaller bowl, mix remaining ingredients. Whisk together briskly to mix. Pour over other ingredients in big bowl and toss to coat. Serve immediately, or refrigerate.
