Reduced-Fat Zucchini Bars with Cream Cheese Frosting

Ingredients
Bars:2 whole eggs2 egg whites2 cup unpeeled grated zucchini1/2 cup oil of choice1/2 cup applesauce2 1/2 cup flour2 cups sugar1/2 tsp baking powder1/2 tsp salt2 tsp cinnamon1/2 tsp baking soda1/2 c chopped nuts (optional, included in nutrition facts)Frosting:1/4 cup butter, softened1 Tbsp skim milk2 cups powdered sugar3 oz. reduced fat cream cheese1 tsp vanilla
Directions
For bars:
Mix everything except nuts thoroughly then blend in the nuts. Pour in greased (11" x 17") pan. Bake at 350 for 30 minutes. Frost when cooled. Cut in bars that are approximately 2.75 in. x 2.42 in.

For Frosting:
Mix all ingredients and spread on cooled bars.

Store finished bars in refrigerator.

    I made for some very fussy vegetable haters. We didn’t tell them that there was a vegetable in the cake. I used stevia instead of sugar. I cooked in two quarter sheet pans and decorated with blueberries, raspberries and bananas in an American flag pattern. There wasn’t a scrap of cake left over. - 5/30/21

    I added a half cup chia seeds to the batter. They were detectable in the dish but it was delicious, and I upped the protein and fiber. Additionally, I made the frosting with 1.5 cups confectioner's instead of 2. Frosting was a little softer but not a soul in my home knew. Delicious!! - 5/21/20
