Pour yeast, honey and salt in a medium sized bowl, add half of a cup of luke warm water and let set. Pour 3 cups of nonfat milk into a glass dish and cook in the microwave until it skims. ( usually 2-3 minutes) Add olive oil to the milk and let it cool for about 15 minutes. Put yeast mixture in a bowl. Add the three egg whites and one whole egg and beat for about two minutes on a medium speed. Add the cooled down milk mixture and two cups of the unbleached flour, and wheat gluten. Beat for another two minutes. Add the flax, oats and some of the flour and beat some more. If you have a kneading hook use it for this step as the bread dough will be getting stiff. Add the remaining flour and oats and knead some more. Let the dough rest to rise covered with a damp towel. After the dough has risen for about 30 minutes grease a rectangular dish and knead the rolls into small balls about 2 inches in diameter. Place the rolls in the pan about one inch about and cover with a damp towel. Preheat the oven to 400 as the rolls rise. After the rolls have risen about twice their size place the pan in the oven and bake for about 20 minutes. Make sure the rolls are lightly browned on the top and bottom of the pan before taking out of the oven. It may take less or more time for them to bake. Enjoy!
