Lighter Coconut Cream Pie

Ingredients
1 C Sweet Coconut (1/4C toasted)1 and 1/2 C -1% Milk 1/2 C Lite Coconut Milk 1 medium egg (lightly beaten)2 TBL Cornstarch1/4 C sugar1 tsp Vanilla1C Fat Free Cool WhipOne Prepared Graham Cracker Curst
Directions
Set aside your 1/4 c toasted coconut-
In a medium sauce pan- poor 1/2 C Lite Coconut Milk,
sugar, and cornstarch, stirring it over medium heat until smooth.
Then add your 1% milk- and egg-and 3/4 C coconut-
bring to a boil stirring constantly until mixture thickens into a thick pudding like mixture-
Remove from heat. Stir in Vanilla.
Pour into crust- and put in fridge until chilled.
Top with Cool Whip and sprinkle with toasted coconut.
Keep in fridge until ready to serve!
