Parmesan Chicken Risotto

1 cup risotto rice1 large onion, chopped2 cloves garlic, minced4 cups chicken stock/broth2 large chicken breasts, cooked and chopped or shredded1/4 cup parmesan, grated
Makes 4 servings.
Heat oil and butter over medium heat. Add onion and saute until translucent. Stir in garlic and rice; saute for 2-3 minutes, until rice is coated. Turn heat down to medium low. Add chicken broth, 1 cup at a time, stirring constantly and allowing the rice to absorb the stock before adding the next cup. Check rice texture, if still crunchy, add more stock. Once all the broth is absorbed, stir in parmesan until blended. Stir in chicken. Yum!
