Katie's Quick Red Lentils

Ingredients
3 cups water1 can diced tomatoes (flavor of your choice; I like fire roasted)1.75 cups low-sodium vegetable broth2 cups red lentilsSalt, to taste
Directions
Bring water, tomatoes and broth to a boil, add lentils. Simmer until soft inside but still retaining shape, usually about 20 minutes. Season with salt and serve with rice.
