Turkey Chop Suey with Rice

1 lb lean ground turkey1/2 C chopped onion1 C (10 oz) chicken broth1 C Chopped celery1 C peas4 Oz water chestnuts, drained and chopped1 C fresh mushrooms, sliced1/4 tsp ground ginger2 TBSP cornstarch2 TBSP soy sauce2 C cooked rice
1. In a large skillet, cook turkey and onion until turkey is done; drain if necessary
2. Add 1 C broth, celery, mushrooms, peas and water chestnuts. Bring to a boil. Reduce heat; cover an dsimmer for 10-15 minutes or until celery is tender
3. Combine corstarch, soy sauce and remaining broth
4. Stir into turkey mixture. Bring to a boil. Cook and stir 2 minutes or until thickened
5. Serve over hot rice
