Sloppy Josephines (meatless)

Ingredients
1/2 T olive oil1/2 C finely chopped onion1/2 C finely chopped green pepper (I use red)1 10 3/4 oz. tomato puree1/4 C water2 T dijon mustard3 T loosely packed brown sugar1/2 tsp garlic powder1/4 tsp cayenne pepper1/2 tsp salt1/2 tsp pepper1 12 oz. bag burger crumbles (defrosted)
Directions
Heat the olive oil in a 12 inch skillet over medium high heat. Add the onion and bell pepper and saute, stirring occasionally until the onion is translucent, 8 minutes. Stir in the tomato puree, water, mustard, brown sugar, garlic powder, cayenne, salt and pepper; cover and simmer gently for 10-15 minutes over low heat.

Fold the soy crumbles into the sauce and cook until heated through, about 2 minutes. Season with more salt and pepper to taste. Serve on whole wheat buns (not included in nutritional information).
