Ham & Beans (with ham hock & salt pork)

(1) 1# bag of pinto beans, soaked over night(2) Ham hocks(1) 8oz package salt pork, sliced like bacon or cubed(2) green onions, whites only(2) stalks celery dicedBlack Peppercorn, ground
Makes approximately (24) 1/2 cup servings.
soak beans overnight, picking out the bad beans & debris as it surfaces. Drain rinse water after about 4 hours and refil.
I cook mine in a crockpot for 12 hrs. However mom made hers on the stove (this is her recipe) and would let it cook all day (approx 6-8 hrs).
take a 1 pound bag of pinto beans that have been soaked over night and put them into either a stew pot or crock pot. Add your diced onion & celery. Place salt pork in a skillet & fry til lightly browned. Pour into bean pot, grease & all. Place ham hocks in bean pot. Fill with water til ham hocks are covered. If using stove top, bring to a boil for about 30 min (skimming off any scum) and then lower heat to a simmer. Cover and let simmer for several hours, go back and check for scum, skim off. Repeat this every hour until beans are tender (6-8 hrs). If using crockpot, just put the lid on and forget them. I set my crock pot for 12 hours and let them cook overnight. However I have made them on the 4 & 8 hr setting and they were just as good.
