Black Bean Stew

Ingredients
Beans, black, 1.5 cup Olive Oil, 1 1tsp Onions, raw, 1 medium (2-1/2" dia) Garlic, 2 clove *Cumin seed, 1 tsp Jalapeno Peppers, 1 pepper , seeded and chopped*Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2" choppedLouis Rich Turkey Smoked Sausage, 3/4 poundPureed Tomatoes, 1 can (29 oz) (401 x 411) Lime Juice, 1/4 cup Water, tap, 1 cupSalt, 1 tsp Cilantro, raw, 3/4 cupScallions, raw, 6 tbsp chopped Sour Cream, reduced fat, 1 tbsp
Directions
Cook black beans according to directions on label.
Heat oil in soup pot and saute onion, garlic, cumin, jalapeno, and bell peppers over low heat, 5 minutes. Add turkey sausage and continue cooking for about 10 minutes over low heat. Add the cooked beans, tomatoes, lime juice, water, salt, and cilantro. Cook together for 5 minutes. Top with a sprinkle of scallions and 1 T. sour cream. Serving size: 1 1/2 cups.
