Poppy Seed Chicken

Ingredients
2 lbs boneless, skinless chicken breast1 can Campbell's Healthy Request Cream of Chicken1 can Campbell's Healthy Request Cream of Celery8 oz. Reduced Fat Sour Cream (50% less fat, 33% fewer calories)1 tsp poppy seedsTopping:1 sleeve Whole Wheat Ritz Crackers1/2 cup Smart Balance Light
Directions
Boil chicken breasts until cooked
Shred chicken
Mix chicken, soups, sour cream, and poppy seeds in a bowl
Put chicken mixture in a 9x13 greased baking dish

For topping, crunch up Ritz crackers.
Add melted smart balance.
Spread over top of chicken mixture.

Bake at 350 for 30-45 mins
Makes 6 large servings

You could reduce or eliminate the Smart Balance for even less fat and fewer calories. Fat free sour cream is also an option.
