Veal Scallopine with Parmesan

Ingredients
4 3 oz. veal cutlets1/4 cup flour1/8 tsp salt1/8 tsp pepper1 egg2 tbsp water1 cup bread crumbs1/2 cup grated Parmesan cheese1/4 cup butter
Directions
Stir together flour, salt and pepper in a shallow dish.

Beat egg and water in a second shallow dish.

Combine bread crumbs and Parmean in a third shallow dish.

Dip each cutlet first in the flour mixture, then the egg, and finally in the bread crumbs.

In a 12-inch skillet over medium high heat, melt the butter. Add the cutlets and cook 2 to 3 minutes on each side.

Transfer to a serving platter. Garnish with parsley.

    You do not need the flour for this. The bread crumbs fall off because of it and its just unneeded cals in general. Other than that-its a good easy recipe! - 10/14/07
