Ingredients
2 Cans 99% Fat Free Chicken Broth1 Can Diced Tomatoes (with or without chilis)1 Can Red Kidney Beans, rinsed well1/2 Cup Corn Kernels1/2 Cup chopped carrots1 Cup Water1 tsp Taco Seasoning (or to taste)Sour Cream for top (optional)
Directions
Makes 6 servings
Cook rice per package directions

Put rest of ingredients in pot and simmer 30 minutes or until carrots are tender. Add rice and heat through.
Top with dollop of sour cream if desired.
