Indian Style Raita

1 6-oz container of plain Greek-style nonfat yogurtJuice of 1 lemon2-inch piece of a small carrot, cut into small julienned strips1-inch slice of cucumber, cut into small julienned strips1 1/2 Tbsp coriander seed1 tsp ground cumin1/4 tsp ground red pepper (cayenne)Fresh ground pepper and sea salt to taste
Combine the yogurt and lemon juice in a container and mix well. Next, add the slices of cucumber and carrot.
With the heel of your knife or a mortar and pestle, crush the coriander seed into rough chunks. Add to the yogurt sauce, along with the cumin and red pepper. Season with salt and pepper to taste.
Serve with naan or fresh pita bread. Also a nice sauce for chicken or lamb.
Makes 2 servings as a side dish, 4 servings as a sauce.
