extra virgin olive oil 1 TBS.kalonji seeds 2 tsp. (not listed, have no calorie count)ginger, chopped 1.5 tsp.onion, diced .5 mediumtomatoes, fresh skinned & diced 2 cupsturmeric, ground 2 tsp.asafoetida1tsp.jalapeno peppers, diced 2chili powder 2 tsp.coriander, ground 1 tsp.cumin powder 1 tsp. eggplant, with skin diced 6 cupspotatoes, without skin diced 3 cupssalt .5 tsp.water 2 cups
Makes 4 servings.
Heat oil in large skillet.
Add next ten ingredients and saute until jalapeno and tomatoes are very soft.
Add eggplant and potatoes. Mix well.
Then add salt and water, cover and simmer for about 20-25 minutes or until potatoes are cooked well.
Serve hot.
