Flourless Gluten-Free Chocolate Cake with Raspberries

Ingredients
1 1/2 cups semi-sweet chocolate chips2 cups garbanzo beans (chickpeas) – cooked if fresh, drained if canned2 eggs1/2 cup egg substitute1 cup sugar3 tablespoons reduced-fat mayonnaise1/2 teaspoon baking powder1 tablespoon powdered sugar1/2 cup fresh raspberries
Directions
1. Place rack on middle level and pre-heat oven to 350 °F.



2. In a small bowl, melt chocolate in microwave oven on medium power for two minutes.



3. In food processor or blender, combine beans, eggs and egg substitute, blending on high for thirty seconds. Add chocolate, sugar, mayonnaise and baking powder and process until smooth.



4. Pour mixture into 9” heart shaped non-stick baking pan or a round pan, baking for 45 minutes or until an inserted knife comes out clean.



5. Cool and dust with powdered sugar and serve with fresh raspberries as a garnish.

    I made this for a friend's birthday who has celiac disease and was pleasantly surprised. It is pretty sweet, but the raspberry sauce cut down on the sweetness. It was very chocolatey (almost like fudge) and the texture wasn't bad either. She kept the recipe so I guess she liked it too!!! - 5/14/08

    Made this for dessert last night. I'm the only one gluten free and all four of us really enjoyed it. I didn't have egg substitute on hand so I used a total of 4 eggs. I sprinkled powdered sugar on top and then added fresh raspberries and drizzled with a few melted chocolate chips. - 9/15/13
