Stuffed Zucchini

Ingredients
1 XL Zucchini2 cups chopped low cal bread1.5 cups tomato1 medium onion2 tbs evooseason to taste
Directions
Chop zucchini length wise in half.
Remove innards.
Mix other ingredients in bowl.
Add to Zucchini "boats"
Bake at 350 for 15-25 min

    I thought this was absolutely delicious! I added a clove of garlic, about a tablespoon of fresh chopped basil and just a dash of salt & pepper. It was easy to cook and very filling - goes great with a glass of red wine! - 9/12/09
