Chicken Breast with Orange Thyme Sauce

Ingredients
8 chicken breasts, skinless and boneless4 tbsp butter, unsalted4 tbsp olive oilsalt and pepper to taste1/2 cup orange juice2 cups chicken broth2 sprigs thyme4 tbsp butter, unsalted, cut into bits
Directions
Preheat the oven to 375 degrees F.

Put 2 tbsp of the butter and 2 tbsp of olive oil into a large heavy skillet and place it over high heat for 2 minutes. Season the chicken breasts with salt and pepper. Place 4 of the breasts in the pan and sear for 1 minute or until golden brown. Turn the breasts over and repeat on other side. Remove to a baking dish and repeat with 2 tbsp butter, remaining 2 tbsp olive oil and chicken breasts. Place the baking dish into the oven for 10-15 minutes, or until meat thermometer reads 170 degrees F.

Meanwhile, add orange juice, chicken broth and thyme to the hot skillet. Cook until reduced by about 3/4 (sauce should coat the back of a spoon). Right before serving, whisk in the remaining 4 tbsp butter. Season with salt and pepper.

Serve chicken with the sauce spooned over the top.

    Very good recipe. Next time I would add a little more oj and a little less chix broth for more orange flavor. Also, I cooked the chicken in the oven for 22 mins and only got to 150 degrees but no pink so we ate it and are still alive. :) - 1/8/10
