Ingredients
1 1/2 Cups Sugar1 Egg1/3 Cup Cocoa1 1/2 tsp. Baking Soda2 Cups GRATED Zuchinni1/2 Cup oil2 Cups Flour1 tsp. salt2 tsp. vanilla
Directions
Beat all ingredients for 1 minute. Pour into a greased and floured 9 x 13 pan. Bake for 25-30 minutes at 350.

    Really good! I used only 1 cup of sugar, and altered the flour to 1 cup white, 1/2 cup of whole wheat, and 1/2 flax meal for extra fiber. Turned out good, just needed to cook it less than 25 min. - 9/23/09

    These are tasty... just don't go in expecting it to taste like a fudge brownie. :-) Think more bread/muffin texture/taste... I enjoyed them quite a bit. Just don't tell your husband and kids what is in them. :-) - 4/30/13
