Marinated Chicken with Vegetables

500g skinless chicken breast fillet2 tbsp soy sauce1 clove garlic, crushed1 tsp finely chopped ginger1/4 cup dry sherrylettuce leaves1 cup broccoli florets2 small carrots, sliced4 baby new potatoes, halved2 cups chicken stock
Place chicken in a glass dish
Combine soy sauce, garlic, ginger and sherry.
Pour over chicken in dish, cover and refrigerate for one hour.
Line the cooker's steaming tray with lettuce leaves, arrange chicken and vegetables over lettuce.
Pour chicken stock into the inner cooking bowl, and place the steamer tray over it.
Cover and cook for 15 minutes, or until chicken is cooked through.
Serves about 4, contains around 350 calories per serve.
