summer soup

Ingredients
15 tomatillios5 tomatos1 potato1 onion3 cups diced summer squash6 peperoncini pepper 2 T pepper juice1 onion soup pack2 tsp fresh thyme2 whole bay leaves1 cup barley2 cups water
Directions
Peal tomatos and chop tomatos, onions, potato, and squash into bite size pieces and place them in a pot. Take the skins off of the tomatillios and wash. Dice into 1 in pieces and add to the pot. Chop the peperoncini into small slices and add to pot along with juices. Stir in onion soup, spices and add water. Boil for 10 minutes and then simmer for 45. Remove the bay leaves and serve. This makes 8 one cup servings.
