Tomato and Horseradish Soup

1 Can Tomatoes2 Tbsp Basil (fresh, half the amount for dry)1 Heaped Tbsp Horseradish2 Cloves Garlic (crushed/pressed/chopped)0.5 tsp Olive oilSalt and pepper to taste. (salt is tomato's best friend, so try not to leave it out)
1. Chop/press garlic
2. In a saucepan, on a low heat, soften the garlic with the olive oil (do NOT burn/fry until brown - this will ruin it).
3. Pour in tomatoes
4. Turn up heat to medium
5. Add all other ingredients (season to taste) and boil until reduced to your preference
(6. Blend in food processor - if you prefer the texture as smooth)
