1.5 c dry brown rice8 oz can of chopped tomato1 med onion2 cloves of garlic10 oz cleaned spinach4 tbs olive oil3.5c water
Sautee onions and garlic in olive oil. Add spinach and sautee until limp. Add tomatoes, water, and brown rice and simmer until rice absorbs the water, about 60 minutes.
Best with crusty bread.
