Southern Living's Beer-Cheese Cornbread

Ingredients
2 c. self-rising white cornmeal mix1 c. shredded sharp cheddar cheese1 c. 2% milk1 tbsp. lemon juice1/2 c. all-purpose flour1/2 c. light beer2 lg. eggs, lightly beaten3 tbsp. unsalted butter, melted2 tbsp. sugar2 tbsp. vegetable oil
Directions
1. Preheat oven to 425 degrees. Heat a 10-inch cast iron skillet with 2 tbsp. vegetable oil in oven for 5 min.

2. Stir together all remaining ingredients just until moistened; pour into hot skillet.

3. Bake at 425 degrees for 25-30 minutes or until golden brown.
