Egg Bagels

Ingredients

4 medium eggs2 packets yeast8 cups flour2 cups warm water1/4 cup salad oil (i.e. vegetable oil)1 tbsp salt1 tbsp sugar
Mix together all ingrediants, then knead for about 10 minutes. Place the mixture in a greased bowl, then cover and allow to rise in a warm spot for 20 mintues. Once risen punch down & divide into 30 pieces. Shape into bagels (either by making a circle and cutting out the middle with a cookie cutter, or by rolling out the dough into a log and pinching the ends together - ensure that ends stick together well!) Allow to rise for 15 minutes.
Drop bagels into boiling water and boil for 3 minutes, turning once at approximately 1.5 mintues. Place on greased sheets (or sheets sprinkled with corn meal) & brush on an egg yolk glaze.
Bake at 450F for 20-25, or until the bagels are golden brown on the outside.
Makes 30 bagels.

This was my first time making bagels. I was extremely pleased on how these turned out. I made these a little healthier by substituting the sugar with stevia. No sugar! I put nuts in some and chocolate chips in others. I also gave a couple a sesame seed topping. I ate mine with strawberry jam.Delish! - 6/5/10
