Quick and Easy Pesto Dish

6 oz. boneless skinless chicken breast, raw, cut into chunks or strips1/4 cup. prepared pesto sauce (we used Barilla in original basil)2 cups fat free chicken brothMrs. Dash tomato basil seasoning4 cups of fresh baby spinach leaves1 can drained diced tomatoes2 small cans of mushrooms drained8 oz. whole wheat/high fiber angel hair pasta 5 T. parmesan cheese, grated for topping (opt. but included in cal. count)
Boil pasta according to package directions. Drain, cover and set aside.
Add chicken to a skillet with the mushrooms and about 1 cup of the chicken broth and cook over medium heat. Season liberally with the Mrs. Dash Tomato Basil seasoning. Add the tomatoes and spinach, and the other cup of chicken broth after the chicken is done. The recipe calls for a lot of spinach, but it cooks down to practically nothing in no time. Cook just until spinach wilts. You can add more veggies as you prefer. Add the pasta to the skillet (or transfer the contents of the skillet to the bowl with the pasta, either way) and stir until combined. There should be plenty of extra broth. Add the 1/4 cup pesto sauce and stir thoroughly. You can top each serving with 1 tablespoon freshly grated Parmesan and ground pepper. Sliced tomatoes would look nice as well.
