1 Tablespoon Extra Virgin Olive Oil1/3 cup unbleached all-purpose flour2/3 cup yellow organic cornmeal1/4 teaspoon salt1/4 teaspoon baking powder1/4 teaspoon baking soda1 Tablespoon sugar1/8 teaspoon fresh ground black pepper1 large egg1/3 cup lowfat buttermilk
Preheat oven to 425°. Put oil in the bottom of a small (6") cast-iron skillet. Place in the oven while you mix the rest of the ingredients. Sift the next 6 ingredients (flour through sugar) together in a medium bowl. Combine buttermilk, pepper and egg, stirring with a whisk. Add egg mixture to cornmeal mixture; stirring just until moist. Remove pan from oven. Tip pan to coat bottom and sides with oil; carefully pour excess oil into batter, stirring to combine. Pour the batter into pan, spreading evenly. Bake at 425° for 15 - 20 minutes until golden brown on top and toothpick comes out clean.
