2 c. whole wheat flour1 t. baking soda1 t. baking powder.5 t. salt or less2 eggs.5 c. canola or olive oil8 oz. plain yogurtcitrus zest (of one orange, lemon or lime)1 c. fresh figs, coarsely chopped or mashed
Preheat oven to 400 degrees F. Sift flour, baking powder, baking soda and salt together. Add yogurt, eggs and oil in turn, stirring well. Add mashed fresh figs and zest of choice, as well as walnuts and/or dried cranberries if desired (not in calorie calculations). After batter is thoroughly mixed, divide into muffin tins (greased if not silicone). Makes 12 not-very-sweet muffins. Using vanilla yogurt will make them sweeter, but also add calories.
