2 rice paper sheets1/4 cup cucumber, cut into matchsticks2 medium scallions4 basil leaves4 mint leaves1/2 cup fresh spinach2 oz fried tofu1 tsp garlic paste1 tsp ginger paste1 tbsp sesame seeds1 tbs[ hoisin sauce1 oz peanuts, chopped
Prepare vegetables and set aside.
Fill a large bowl with lukewarm water and soak 1 sheet of rice paper until paper becomes soft and pliable. Shake carefully or pat off excess water. Lay the sheet down on a plate or cutting board and fill the center with garlic and ginger paste, vegetables, tofu, and sesame seeds. Wrap up like a burrito and lay seam-side down on plate. Repeat process. Mix hoisin sauce and peanuts for a dipping sauce. Makes 2 wraps.
