Brunch Enchiladas

Ingredients
2 cups chopped ham1/2 cup chopped green onions10 flour tortillas(8in)2 cups reduced fat shredded cheddar(or colby jack)1 T flour2 cups fat free half and half6 eggs, beaten1/4 t salt, optional
Directions
Combine ham and onions; place about 1/3 cup down the center of each tortilla. Top with 2 T cheese. Roll up and place seam side down in a greased(I use nonstick spray)13x9x2 baking dish. In a bowl combine flour, half and half, eggs and salt if desired until smooth. Pour over tortillas. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 min. before baking. Cover and bake at 350 for 25 min. Uncover; bake for 10 min. Sprinkle with remaining cheese; bake 3 min.longer. Let stand 10 min. before serving.
