Kashi muffins

Ingredients
1 cup Kashi GoLean cereal3/4 cup wheat flour, unbleached2 tsp. baking powderI large egg1 tsp. cinnamon1/4 tsp nutmeg1/4 cup Sucanat (natural cane sugar) 1/4 cup Canola oil1/3 cup unsweetened applesauce1 tsp. vanilla extract3/4 cup low fat milk1/2 cup dried sweetened cranberries
Directions
pour cereal in large bowl and add milk, let sit 20 minutes. In a separate bowl, mix flour, baking powder, sugar and spices. Add dry ingredients and rest of ingredients to cereal and milk, stirring until blended. Fill muffin tins lined with paper cups 2/3 full and bake in a preheated oven at 350 degrees for 20-25 minutes until muffins are done. Makes 12 muffins.
