5 diced red potatoes (used whatever - I got about 3 cups of diced potato)About half a cup diced tomatoes1 jalapeno, chopped up small1/4 cup diced onion2 finely chopped garlic cloves1 or 2 green onion stalks, chopped1/2 green bell pepper, diced1/4 cup shredded cheddar cheese3 eggs
Add oil to skillet, fry potatoes until they have passed the soft stage and are into the golden stage. Add onions and garlic, stir, and cook for a while longer. Pour mixture out onto plate with a LOT of paper towels and soak up extra oil. Put mixture back in skillet, and add rest of the veggies. Stir and cook for about 3 more minutes. Then, add the eggs and keep stirring. When you're done, top with cheese. Makes about 5 one cup servings.
