Sugar Cinnamon Cookies "Gluten Free"

Ingredients
4 eggs3/4 cup sugar1 tsp. vanilla1/4 tsp salt1/2 melted butter3/4 cup coconut flour2 tsp cinnamon2 tsp sugar
Directions
Combine eggs, sugar vanilla and butter, Mix well. Stir in coconut flour, let mixture rest for 5 mins. to allow it to thicken. Combine 2 tsp cinnamon with 2 tsp sugar.

place approx 1 tbsp on cookie sheet l inch apart sprinkle with the cinnamon mixture.

Bake at 375F for 13 mins. Makes about 25 cookies

    These are the lowest calorie, gluten-free, sugar-free cookie I have found and they are yummy. I added nutmeg for a spicier cookie but you could have lots of fun using this base and experimenting with spices and flavor extracts. - 7/3/16
