Greek Lentil Soup

Ingredients
2 cups uncooked lentils7.5 cups vegetable broth1 medium yellow onion chopped2 carrots sliced1 celery stalk chopped1 zucchini sliced2 tbs extra virgin olive oil2 bay leavessalt & pepper to taste2 tsp red wine vinegar
Directions
Wash lentils, drain. Add all ingredients except vinegar. Bring to a boil, then cover and simmer 1 hour. Remove from heat and add vinegar. Serve.
