Ingredients
! Egg plant peeled and cubed1/2 pound ground round1 tbsp minced garlic12 ounces pasta sauce(ragu)1/2 cup shredded cheese (4) cheese1 cup onions chopped3 tbsp olive oil2 oz pasta or egg noodle dry
Directions
Heat olive oil, add garlic brown lightly add eggplant, add meat and onions.
brown meat, add water if needed. drain excess oil and add pasta sauce Let simmer for 25 minutes. Boil noodles as directed. add cheese to meat sauce. add pasta before serving. Serves 5

    I made some changes so I need to calculate my nutritional information. I didn't use a pasta sauce, I made a low fat mushroom soup ~ which was yummy! - 2/27/10
