Vegetable Stew

Ingredients
8 very ripe tomatoes, chopped2 cups green beans1 cup chopped onion1 cup chopped carrots (or baby carrots)1 cup fresh spinach1 tbsp fresh cilantro2 tsp chopped garlic1 package frozen mixed veggies
Directions
Throw all ingredients together into crockpot. Cover with water, set on low & let simmer through the day. Add water as desired to thin - I leave it thicker & serve up as a veggie stew.
