Squash and Pear Soup

Ingredients
1 butternut squash, peeled, seeded, and cut into cubes2 pears, cored, peeled, and cubed1 onion diced1 tbsp grated ginger4 cups chicken brothsour cream -optional2-3 tbsp oilCalories calculated for this do not include sour cream.
Directions
Heat oil in a large soup pot.

Throw in your onion and ginger and cook until soft.

Add in squash, pear, chicken broth, and salt & pepper.

Bring to a boil then cover and reduce to a simmer for 15 minutes or until squash is tender. Let cool for a few minutes then puree with a blender.

Top with sour cream if you'd like.
