Cabbage and potato hash

Ingredients
1 large onion, chopped1 small head cabbage, coarsly chopped6 medium red potatoes, unpeeled, cubed3 carrots, sliced3 cloves garlic, minced4 tbsp gingerroot, minced1/2 cup vegetable broth 1 1/2 tsp soy saucesalt and pepper to taste1/4 cup fat free sour cream
Directions
1. Saute onion, cabbage, potatoes, carrots, garlic, and gingerroot in lightly greased large skillet until lightly browned, about 8 minutes. Add broth and soy sauce and cook, covered, over medium heat until vegetables are just tender, about 5 minutes. Seeason to taste with salt and pepper. Serve with sour cream.

    I liked this and will make it again. I need to get a bigger skillet to make it. It took longer than it said to get the vegetables done but might have been my skillet. Doesn't really need the sour cream but it was good with it, so it would work for vegans. - 5/11/10
