Porcupines (Stuffed Meatballs)

1 pound extra lean ground beef2 cups tomato sauce, divided into 1/2 cup and 1 1/2 cup1 large egg1 cup brown rice, uncookedChili Powder (1/2 - 1 teaspoon0Cumin (1/2-1 teaspoon)Garlic Powder - 1 teaspoonOnion powder - 1 teaspoonWater as needed
Mix spices, egg, 1/2 cup tomato sauce and meat together. add rice. Mix.
Make into meatballs.
Place rest of tomato sauce in electric skillet or into regular skillet. Add Meatballs. Add enough water to cover to 3/4 thickness of meatball.
Cook over a simmer for 45-60 minutes. Add water if needed to keep sauce from getting too thick.

Uncooked rice... Which is why you need to add the water. The rice cooks and pokes out of the meatballs like porcupine quills, which thrilled us as kids and so this became one of our favorite meals!
