Marion's Chicken and vegetable Curry

Ingredients
Red/Yellow capsicum chopped (mixed) 34gFresh Spinach or silverbeet chopped 44gCauliflower chopped 82gCarrot thinly sliced in rings 40gFrozen Peas 80gOnion thinly sliced 70gGarlic- 2 teaspoonsGinger i used minced 1 teaspoonCurry powder 1.5 tablespoons (or to your taste)Chicken Breast no skin 260gCooked rice to serve approx 2 cups
Directions
Saute onions, garlic and ginger and capsicum until onion softened then add chicken (diced bite size pieces) and cook until just sealed. Add the curry coating the chicken well Add 1 cup of water and cook on medium heat until chicken is cooked. Then add all other vegetables and bring to the boil, simmer for about 15-20 minutes or vegies are cooked to your liking. Serve with cooked rice. ENJOY.
