Carbquik Sausage Gravy

1/2 roll of pork sausage1/2 c. whole milk1/2 c. fat-free milk3 tbsp. salted butterCarbquik (about 2-3 tbsp - enough to make a rue)Salt (to taste)Pepper (to taste)Sage (to taste)Optional - Rep pepper flakes (to add some heat)
Cook pork sausage on medium heat in a deep sided pan until done. Remove sausage from pan and place in a bowl, but leave fat from sausage in the pan. In the same pan, melt butter and add Carbquik (you may need to adjust amount) until combined to create a rue. Slowly add the milk to the rue, whisking until combined. Add sausage to the gravy and season to taste. Remember that the sausage has salt, so season AFTER you have added the sausage to the rue.
