Ingredients
1 lb ground turkey (93% fat free)1 2/3 cups black beans (cooked)2 cups white rice (long grain) cooked1/2 cup chopped green bell peppers1/2 cup chopped red bell peppers1 cup chopped celery2/3 cup chopped onion1 cup diced tomatoes3 small jalepeno peppers (chopped)1 tsp Tony Cachere's Creole seasoning
Directions
Brown the ground turkey with the chopped onions, bell peppers, and celery. Add beans, rice, tomatoes, jalepenos, and creole seasoning. Let simmer 20-30 minutes and then serve.

    I have always found working with ground turkey to be relatively dry, so I used 1/2 lb ground chicken and 3 breakfast-link sausages (with casing removed). I also cut out the jalepenos.
    This recipe turned out really delicious and it will definitely be my go-to meal whenever I have leftover rice. - 2/19/10
