Virtuous turkey soup

1 lb lean ground turkey6 cups low sodium chicken broth1 large onion chopped1 small cabbage shredded fine1 large can stewed tomatoes.5 cup pearl barley (or orzo)1 tsp. chopped garlic1 tbsp olive oilfresh basil or 1 tsp dried flakes
Put olive oil in large soup pot. Sautee the turkey until no longer pink. Remove turkey with a slotted spoon. Stir fry onion, garlic and shredded cabbage in remaining juices until soft. Add tomatoes and chicken broth and bring to a boil. reduce heat and simmer for 30 mins. Add pearl barley and simmer another 15 minutes. Great for dinner with a cheese biscuit. Serves 8.
