Lemon Herb Pork

2 tsp Olive oil3/4 lb Pork Tenderloin (cut into 1/4" slices)3 halved slices of lemon1 1/2 tbsp chopped fresh parsley1/2 tsp dried tarragon1 1/2 tsp lemon zest1 clove garlic, minced1.5 fl. oz. white wine (dry)1.5 fl. oz evaporated milk1/2 tsp saltpinch pepper
1. Sear pork slices in oil on high heat for one minute per side. Remove to plate and keep warm.
2. Reduce heat to medium. Add lemon, parsley, tarragon, lemon zest and garlic to same pan. Stir for 1 minute (until garlic is golden)
3. Add wine. Boil for 1 minute to reduce wine by half.
4. Add remaining ingredients and pork. Cook until heated through.
