Charro Beans

Ingredients
2 cans pinto beans, rinsed3 slices of bacon, cut into 1/2 inch strips1 medium tomato, diced1/4 cup cilantro, chopped2 cloves of garlic3 jalapeno peppers, seeded and finely choppped (leave seeds in if you prefer it spicier)2 cups chicken stock
Directions
Fry slivers of bacon in a medium sauce pan until lightly browned.
Add onions, garlic and jalapenos and saute until onion becomes translucent.
Add tomatoes and cook until most of liquid has evaporated.
Add cilantro, chicken stock, and beans.
Simmer for one hour, or longer if you like a thicker soup.
